NEW YORK – Not looking forward to another boring meal of turkey pot pie or chicken surprise?  Don’t have enough time to prepare meals, making your family turn to ordering an unhealthy calorie-filled pizza?  That is why Eggland’s Best (EB) is calling all moms (and even dads and grandparents!) to bring back Breakfast for Dinner - the quick, easy and delicious way to spruce up your dinner menu and help gather “the gang” around the dinner table!  And, since Eggland’s Best eggs are better-tasting and healthier than ordinary eggs, they are the perfect staple for your Breakfast for Dinner recipes.

            Eggland’s Best also offers an array of dinner menu options that would be perfect for parents who want something new and interesting to create without all the prep time.  Some great recipes using EB eggs (see below) include french toast strata, huevos rancheros – even hash brown frittata.

             Compared to an ordinary egg, EB eggs contain 25 percent less saturated fat, 200 mcg of lutein, provide ten times more Vitamin E, 180 mg of cholesterol, compared to 215 mg in ordinary eggs, plus 40 percent of a person’s daily requirement of iodine, and are an ideal way to include Omega 3 in one’s diet.

HASH BROWN FRITTATA (4 Servings) PRIVATE

4 EGGLAND'S BEST ORGANIC eggs

2 cups (8 oz.) frozen Southern Style hash brown potatoes

½ cup sliced fresh mushrooms

¼ cup chopped onion

¼ cup chopped sweet red pepper

¼ cup 1% low-fat milk

½ tsp garlic salt

¼ cup (1 oz.) low-fat shredded cheese

Step 1: Place potatoes, mushrooms, peppers and onions in a 9-inch pie plate sprayed with non-stick spray. Cover with plastic wrap.  

Step 2
: Microwave on full power until pepper is crisp-tender, about 4-6 minutes.

Step 3: Beat together EGGLAND'S BEST eggs, milk and garlic salt until blended.  Stir into vegetables.

Step 4: Cook on full power just until set but still moist, about 6-8 minutes.  Sprinkle with cheese.  Cover and let stand about 1 minute to complete cooking time.

FRENCH TOAST STRATA (8 Servings)

8-10 slices day old bread torn into pieces.

1 package (8 oz.) cream cheese (softened)

1 cup milk

10 EGGLAND'S BEST eggs

1 tsp cinnamon

1 tsp grated nutmeg

1 tsp orange extract or 1 Tbsp orange liquor

¼ cup brown sugar (optional)

Step 1: Evenly layer bread cubes over the bottom of greased 9 x 13 baking dish.

Step 2: Blend milk, cream cheese, EGGLAND'S BEST eggs, spices and orange extract in a blender until well mixed.  Pour evenly over bread. Cover. Refrigerate over night.

Step 3: Uncover and bake in a preheated 3500 oven for approximately 35 minutes until golden brown and knife inserted near center comes out clean.

Step 4: Sprinkle with brown sugar (optional).  Serve with warmed maple syrup.

SAUSAGE CUPS         

1 EGGLAND'S BEST egg

½ cup carrot, raw-scraped-shredded

1 slice bread, whole-wheat-firm-enriched

16 oz. turkey sausage

No-stick cooking spray

Step 1: In medium bowl, mix together all ingredients. 

Step 2: Spray 4 (10-ounce) glass custard cups with non-stick spray and divide the meat mixture among them. 

Step 3: Pat the meat mixture up along sides and cover the bottom.  Place the cups on a baking sheet and bake for 10 minutes.  Pour off any fat. 

Step 4: Remove meat from custard cups and fill with your favorite insides (e.g. poached or scrambled EGGLAND'S BEST eggs)!

HUEVOS RANCHEROS (2 servings)       

2 EGGLAND'S BEST CAGE-FREE eggs

1 tsp vinegar

½ cup gourmet black bean dip (mild or spicy)

1 oz. unsalted, baked tortilla chips

2 Tbsp low fat sour cream

1 tsp chopped fresh cilantro fresh cilantro sprigs (optional)

Step 1: To poach eggs, bring water to a boil in small skillet over high heat; add vinegar and reduce heat to medium-low and maintain a simmer. 

Step 2: Gently break EGGLAND'S BEST eggs into water, being careful not to break yolks.  Cover and simmer 5 minutes or to desired firmness.

Step 3: Meanwhile, place bean dip in small microwave bowl or small saucepan.  Microwave bean dip on HIGH (100% power) 2 to 3 minutes or heat over medium heat until warm. 

Step 4: To serve, spread ¼ cup warm bean dip in center of serving plate; top with 1 poached egg and 2 tablespoons salsa.  Arrange 10 tortilla chips around egg.  Dollop with 1 tablespoon sour cream and sprinkle with ½ teaspoon chopped cilantro.  Repeat with remaining ingredients.  Garnish with cilantro sprigs, if desired.
